Patna: litti-chokha (roasted sattu-stuffed balls with mashed brinjal/potato — the street stalls near Patna Junction and Maurya Lok are classics), sattu paratha, and khaja from Silao on the way to Nalanda. Champaran-style mutton ('ahuna', slow-cooked in a sealed clay pot) is the famous mutton dish — many Patna restaurants now do it. Gaya: tilkut (sesame-jaggery brittle) from Ramna Road or Tekari Road. Bhagalpur: katarni rice, and the river fish. Darbhanga/Mithila: maachh-bhaat, makhana kheer and the famous curd. Sasaram/Shahabad: chura-dahi and chana ghugni for breakfast.
